Ogbono soup gets thicker as it stays so if you plan on not serving this immediately, you can add a little more extra stock or water. Steps to make Agidi and Ogbonor soup:

  1. Wash ur beef and place on a pot,add Onions,salt and knorr and cook on its stock for abt 3-4 mins then add more water and cook till done..
  2. Whilst ur beef is still cooking,pour ur Ogbonorbinside a bowl,add oil and mix thoroughly and put inside ur beef pot,cover and allow to simmer till it dissolves,remove and set aside..
  3. Once ur beef is done with little stock remaining, pour in ur Ogbonor,crayfish, grated onions,Okpei and dry pepper and incorporate together,and simmer for a few mins..
  4. Add ur vegetable and simmer for 2-3 mins..
  5. Ur Ogbonor is ready..
  6. For the Agidi, wash d corn,briefly per boil it and soak overnight..
  7. Empty the water and briefly wash and take it to where u can grind it..
  8. Once its grounded, use ur pap cloth or sieve and begin to filter into another bowl..
  9. Once u have finished filtering,allow it to sit preferably overnight..
  10. When all d water is drained out d next day, u can pour d content into a pot and begin to stir continuously till u get ur desired consistency..
  11. Store in desired bowls and allow to cool..
  12. Ur Agidi is ready..
  13. Enjoy with ur Ogbonor or any soup of choice..

I believe Ogbono is the seed of the bush mango, or wild mango tree (Irvingia gabonensis or Irvingia wombolu), which is native to the tropical Atlantic coast region of Africa like Nigeria, Cameroon and Gabon. Ogbono soup is popular everywhere in Nigeria and neighboring countries too. Each region has its own variations, but meat, greens and ogbono seeds are the common elements. Meats: Any kind of meat can be used in ogbono soup. Beef and goat and bushmeat are popular, but you can use chicken too.
